Chef Lior Shva

Lior Shva is an Israeli chef that has strong roots in Western Europe, having also lived in Belgium until the age of 12. Classically trained and with years of experience at some of the best Michelin-starred restaurants in the UK, Lior always strived to learn from the best.

You won’t find any gimmicks like gold leaf or air-flavoured foams on the Supper Club menu. Every element on the plate has a purpose and is made from scratch by Lior or by local artisans.

Private Culinary Events

Have the whole venue to yourself. Celebrate birthday parties, family gatherings or meaningful events in an intimate surrounding, with great food and wine. You can detirmine the pace, the atmosphere, even the playlist. Menus can vary according to your dietary requirements and requests. Imagine asking for for a specific dish, for your wife’s surprise birthday party, because it’s her favourite. Just let us know in advance and we will do our best to accomadate it.

Questions & Answers

An open meal costs 690 NIS per diner, including everything!
This includes a welcome cocktail, all food, wine pairing (bottomless), water and soda, hot drink to conclude, VAT and service.
*For designated drivers/pregnant women/any other reason why you don't want to have wine – you can order a meal without the wines for 590 NIS per diner.

11 Seasonal dishes made from Israeli ingredients.
The style is European (after 12 years in Michelin restaurants, it kinda stuck with me).
The wines are also all from small, excellent Israeli wineries.

The Supper club is a fine dining experience open to the public. Dates are published in advance and anyone can purchase a ticket – single or double – and join in. You will be sharing the experience alongside other people, sat around a large table in front of an open kitchen, where you'll be able to see the food being prepared and plated. 
It's an opportunity for a social evening, but it's also perfectly fine to maintain private and enjoy the experience with just the partner you came with.

At meals in Binyamina, up to 18 people can be sat around the table.
This is true for an open meal or for private events that you can book with me.

The evening lasts something between 3.5-4 hours.
We usually start at 7:30 PM.

My kitchen is not kosher.
So if you have no problem eating kosher food in a restaurant that is not kosher,
I totally recommend the dairy and fish menu options.
You won't feel like you missed anything, I promise.

A meal that starts with appetizers, continues with savory dishes, a main course, desserts (yes, plural) and finally ends with hot drinks and petifours.
All dishes are individually plated. No need to share food with strangers.

In the quiet  Whatsapp group!
Most of the dates don't make it to social media because they're already full.
This is a practical group, just posting dates and various pop-ups.

Of course!
But lunches are only for private or business events.
I also facilitate team meetings, team building days and seminars for businesses at my place.
All of this is accompanied by food and drinks throughout the afternoon.
There are different spaces for sitting, there is a screen for presentations and there is full privacy.

Yes!
Because all the dishes are individually plated, I make adjustments to each person's plate and it doesn't affect anyone around them. Yes, it can be a real Sudoku for us in the kitchen sometimes, but that's how we make sure everyone is served a dish they will like and are safe to eat.
*I will add, unfortunately, that there are a few culinary preferences that I can't accommodate in a Supperclub (an open meal) because it would really overwhelm the kitchen to do everything at the same time. But I would be happy to host these people in private events when all the diners eat the same.

After the opening speech and toast, you will sit around a knights’
table overlooking the open kitchen and continue your meal.
We will serve you a selection of warm breads accompanied by handmade butters.
The following dishes will be served one after the other at the center of the table:

Zucchini risotto with whey sauce and stuffed zucchini flowers.

Seared sea fish, pearl barley, fresh peas, sea-picked leaves and dashi sauce.

Green leaf salad, beets with seasonal fruit and HaMeiri cheese.

A variety of tomato, basil oil and burrata salad.

Sautéed chard and spinach with poached eggs and hollandaise sauce.

Filo pastry and wild mushrooms.

Potato gratin with Jerusalem artichoke cream and potato crisps.

After an “active” break from lectures, a variety of desserts will be
served in individual portions, along with hot drinks.

Mascarpone cream, seasonal fruit and a sable cookie that breaks like a crème brûlée.

A soft brownie with chocolate ganache.

Coffee panna cotta, white chocolate cream and coated peanut pieces.

Puffs filled with Tonka cream.

Madeleine cookies filled with raspberries and pistachio.

Corn tortellini with yellow tomato gazpacho, basil flowers and sweet cherry tomato raisins.

seared sea fish, fresh peas, sea-pickled leaves and a reduced fish stock.

Main course

A slice of Israeli cow, Jerusalem artichoke cream, shredded meat
croquette and demi-glace.

Dessert

Mascarpone cream, strawberries, juniper syrup and a sable cookie
that breaks like crème brûlée.

Finally, we will finish with a hot drink of your choice alongside Petiphores.

Each dish will be served personally with explanations of the ingredients and the story behind the dish, according to
your request.
